Coconut & Cheese Bread

Berhubung ada sisa kuning telur dari pembuatan Opera Cake, maka aku buat Coconut & Cheese Bread dari buku Varias Roti Lezat & Cantik 2. Hahhhhhhhhhhh, karena membuat roti ini, malemnya ga bisa tidur karena kedua tangan sakit sekali akibat terlalu banyak ngulenin:p
Dulu-dulu ga pernah tuh karena ngulenin jadi sakit ngilu gitu. Kemaren sepertinya terlalu lama ngulenin:o Dan ini roti prosesnya lumayan lama, aku juga mulai buat udah agak siangan jadi diputuskan adonan disimpan dulu (setelah point no. 5) di freezer, malemnya aku pindahkan ke chiller. Besoknya adonan didiamkan sekitar 3 jam sampai melunak kembali baru dibentuk dan diberi isi dan dipanggang.Hasilnya enak dan roti pun empuk.

Bahan A:
300 gr tepung terigu protein tinggi
1 sdt ragi instan
250 ml air es
Bahan B:
100 gr tepung terigu protein tinggi
100 gr tepung terigu protein sedang
1 1/2 sdt ragi instan
75 gr gula pasir
50 gr susu bubuk
2 kuning telur
1 butir telur
50 ml air
75 gr mentega tawar (aku pakai yang salted)
1 1/2 sdt garam (aku pakai 1 sdt)
susu evaporated untuk olesan
Bahan Isi:
100 gr mentega tawar (aku pakai salted)
60 gr gula tepung
2 kuning telur
50 gr susu bubuk
50 gr kelapa kering
100 gr keju cheddar parut

Cara:
1. Bahan A, aduk rata tepung dan ragi. Tuang air es sedikit-sedikit sambil diuleni sampai kalis. Diamkan 2 jam.
2. Bahan isi, kocok mentega dan gula tepung 30 detik. Tambahkan kuning telur dan susu bubuk, kocok rata. Masukkan kelapa kering, aduk rata. Terakhir masukkan keju, aduk rata.
3. Bahan B, aduk rata tepung, ragi, gula pasir dan susu bubuk. Tambahkan bahan A, uleni sampai rata.
4. Tambahkan telur dan air sedikit-sedikit sambil diuleni sampai kalis.
5. Masukkan mentega dan garam, uleni sampai elastis. Diamkan 30 menit. Kempiskan adonan.
6. Timbang masing-masing adonan 30 gr. Bulatkan, diamkan 10 menit.
7. Giling adonan, oles dengan isi, gulung. Letakkan di loyang yang dioles margarin. Kerat-kerat tipis atasnya.
8. Diamkan 60 menit sampai mengembang. oles dengan susu evaporated.
9. Oven 10 menit dengan suhu 190 derajat Celcius.

English Version

Ingredients A:

300 gr bread flour
1 tsp instant yeast
250 ml cold water

Ingredients B:

100 gr bread flour
100 gr cake flour
1.5 tsp instant yeast
75 gr sugar
50 gr milk powder
2 egg yolks
1 whole egg
50 ml water
75 gr unsalted butter
1.5 tsp salt
evaporated milk for brushing

Filling:
100 gr unsalted butter
60 gr icing sugar
2 egg yolks
50 gr milk powder
50 gr dessicated coconut
100 gr cheddar cheese, grated

How to make:
1. Ingredients A, combine bread flour and yeast. Add cold water a little at a time, gently kneading it until the dough is smooth. Cover with plastic wrap/a clean towel for 2 hours until doubled in size.
2. Filling, beat butter & icing sugar in 30 seconds. Add egg yolks, milk powder, beat until all combined. Add dessicated coconut & cheddar cheese, stir until well combined. Set aside.
3. Ingredients B, combine the flour, yeast, sugar and milk powder, add the dough A, knead until smooth.
4. Add egg & water a little at a time, continue kneading it.
5. Add butter & salt, continue kneading until elastic, cover the dough and let it stands for 30 minutes (doubled in size)
6. Divide the dough in 30 gr each, and roll into balls. Set aside for 10 minutes.
7. Roll out dough, spread the filling, and roll it up. Transfer to a greased baking sheet, score the top vertical with paring knife.
8. Let it stands about 60 minutes, brushing the top with evaporated milk.
9. Bake 10 minutes, 190 Celcius.
